Sue’s Lentil Soup
• 16 oz Dried lentils , yellow or red
• 6 cups Water
• 1 Onion , diced
• 2 Tbsp Evoo 
• 2 Tbsp Flour
• 3/4 tsp Cumin
• 1 tsp Garlic Powder
• 1 tsp Salt
• 1 tsp Pepper
• 1 Large carrot, chopped
Preparation Steps
1. Wash and drain lentils. 
Place in pot and add water. Cook on medium heat. 
In a separate bowl, add onion olive oil, flour, cumin, garlic powder, salt and pepper. Mix well. 
Let the lentils and water boil for twenty minutes. 
Add onion mix cover and simmer 20-30 min. 
If too thick add more water. Add any other veggie u like. Optional 1-2 cups of chopped kale.
