1 lb high-quality olives (3 cups)
1 tbsp ground coriander
1 tbsp gound cumin
1 ¼ cup extra-virgin olive oil
3 cloves minced garlic
1 tsp crushed red pepper
In a bowl, zest lemon and squeeze lemon juice on olives.
Heat ¼ cup olive oil on medium-low, add coriander, cumin and garlic. Cook until lightly brown.
Add heated mix, remaining olive oil and spices to olives and gently stir.
For best results, refrigerate, letting olives marinate for 5-7 days, stirring once daily.
