Pulled Pork Barbecue (vegan)

Strange, I know, but delicious. There are a ton of recipes online for this but don't bother! Just add barbecue sauce and eat! Here's how...


1 can Green Jackfruit in brine per person

3-4 T barbecue sauce per can (is there any kind other than Sweet Baby Ray's?)


Preheat oven to 350.

Drain jackfruit in a colander. 

Spread out onto a parchment-lined sheet pan.

With clean hands, separate the chunks of jackfruit into shreds removing the seeds. 

Spread the shreds into a flat layer on the parchment paper and place into the oven for 30 minutes to dry out a little.

Place the somewhat dried out jackfruit into a skillet and pour barbecue sauce on it and stir, continuing to break up any remaining chunks. Heat through.

Serve in a soft corn tortilla or bun with my Cool Creamy Slaw on top.
