Oil Free Hummus

This is my FAVORITE hummus! I make a batch every week! My next favorite Oil-Free hummus is sold by Roots. They charge $5 for about 6 oz! This is about $2 for almost 3 cups!! Feel free to add chopped fresh basil, chipotle in adobo, or whatever flavorings you like! if you try something new, write and tell me about it! kristi@kristiwhitley.com


3 C cooked garbanzo beans (chickpeas)*

3/4 C cooking liquid (more if necessary)

1/4 c tahini (sesame seed paste)

2 med cloves garlic peeled

Juice of 1 large lemon

1 t smoked salt

1/2 t ground cumin

1/4 t smoked paprika


Add all ingredients to a high speed blender. A regular blender may work as well but I haven't tried it. 


Blend until smooth adding more cooking liquid if necessary to get a creamy smooth consistency. 


* Instant Pot Chickpeas

1 lb dried chickpeas (garbanzo beans)

12 cups filtered water


Place beans and water into the Instant Pot (or pressure cooker) and set vent to "sealed". Cook on "manual" setting for 35 minutes. Allow Instant Pot to release pressure naturally. 


Beans can be frozen in their liquid for future use. 


** I make a batch of beans and measure them into zip top freezer bags with 3 cups of beans and 1 1/2 cups of liquid per bag. That way I have them ready for making hummus every week.
