Mac's Peanut Butter Pumpkin Pie-in-a-Jar

1 1/2 cups Granola

           (without fruit, see notes)


1 can Pumpkin Puree

1/2 cup Peanut Butter

1 cup Non-dairy Unsweetened,

           Plain Yogurt

1/2 cup Maple Syrup

1 tablespoon Pumpkin Pie Spice

1 teaspoon Vanilla Extract

1/4 teaspoon Salt

Optional toppings: Non-Dairy Whipped Topping, granola crumbs, chocolate chips, and/or crushed peanuts


1. Place granola into a high-speed blender and blend into crumbs. Spoon into 8 small serving dishes or 1/2 pint mason jars. Use the blender tamper to lightly tamp down the crumbs into a crust. 

2. Place the filling ingredients into the blender and blend until smooth. Spoon the filling into the serving dishes. Add optional toppings and chill for at least 1 hr.
