Lentil Tacos

This is a simple method to make this yummy substitute for taco meat. Use it in burritos, tacos, taco salad or in Mexican bowls with roasted vegetables, rice, salsa, and avocado. You can substitute my list of spices for your favorite taco seasoning.


Ingredients:

2 cups dried lentils

3 cups water

1 15oz can diced fire roasted tomatoes

2 t salt

1/2 t pepper

1 t cumin

1 t chili powder

1 t dried oregano

1 t garlic powder



Place all ingredients in a pot with a lid and bring to a boil. Reduce heat and simmer for 45 min to 1 hour. Dried lentils cook at different speeds depending on the freshness so be patient. Add water and cook longer if needed. 


These are much faster in a pressure cooker. After coming to pressure, simmer for 8 minutes then take off the heat and let it reduce pressure on its own. 


Freeze leftovers.
