Green Gazpacho Blended Salad

This nutrition packed meal is perfect for summer. 


Serves: 2

Ingredients:

1 cucumber, chopped
1 tomato, chopped
1 carrot, peeled and chopped
1 bell pepper, chopped
1 lime, juiced
1/4 teaspoon ground cumin
1/2 avocado, peeled, pitted
6 ounces romaine lettuce
1/2 cup frozen corn, if desired
1/2 cup ice

Instructions:

Blend ingredients in a high-powered blender until smooth. Add additional ice if desired.
