Garlic Mashed Potatoes with Pinto Bean Gravy

Mashed Potatoes

1 lb potatoes, peeled, diced and boiled in salty water, drained

2 T Earth Balance butter substitute

+/- 1 cup non-dairy milk

1 t garlic powder or granulated garlic

Salt and Pepper

Mash the potatoes and butter substitute with a potato masher. Drizzle in milk until potatoes are the desired consistency. Season with garlic powder, salt and pepper. 

Pinto Bean Gravy

1 Can pinto beans

1/2 cube of Not Beef Bouillon 

Place the entire can of beans with its liquid and the Not Beef into a small sauce pan. Heat on medium until hot. Puree the beans with an immersion blender, food processor, or blender until smooth. Add water as necessary to the desired "gravy" consistency.
