"Egg" Salad w/ tofu

This "Egg" salad will fool anyone into thinking it is real eggs! I have served it to many people and only told them it was tofu after they ate it!  serve as a sandwich, or atop a green salad with crackers. It also makes a great base for potato salad. Just add boiled potatoes and adjust the mayo and seasonings. Order Black salt from Amazon if you don't have an Indian Market. 


1 package extra-firm tofu

3 stalks celery, minced or finely diced

3 green onions, minced or finely diced

1/3-1/2 cup Vegenaise

2 T yellow mustard

1 t dried dill

1/2 t Black Salt (found in Indian markets, color is pink and smells like boiled eggs)

dash of hot sauce

salt and pepper to taste

1/2  packet of stevia or equivalent to taste

Place the drained tofu between a thick layer of paper towels and press it with a heavy object like a skillet.

While the tofu is draining, chop the celery and onions and place them in a medium mixing bowl. Add everything else besides the tofu and stir to combine. Crumble the tofu and add to the veggie mix. Stir to. combine.
