Chorizo Cornbread Stuffing
• 2 Tbsp Plant Butter
• 1 large Onion
• 4 Stalks celery
• 4 ounces Chopped mushrooms 
• Salt and Pepper
• 1 tsp Poultry seasoning
• 4 Slices gluten free bread, cubed 
• 1 1/2 recipe Vegan Gluten-Free Cornbread 
• 2 cups Vegetable broth, more or less
• 1/2 pkg Trader Joe’s soy Chorizo

Preparation Steps
1. Melt butter in a large skillet. 
Sauté vegetables until tender. 
Add seasonings. 
Add bread, cornbread and broth a little at a time until all is moist. Stir to combine everything. 
Add crumbled chorizo and fold in. 
Bake in the skillet 350 degrees for 30 min. Or until crispy on top.
