Apple Lentil Slaw


This is a hardy salad with a bright, fresh lemony dressing. I ate it seven times in one week when I first learned how to make it! Hope you like it as much as I do.


Serves 2

1 cup cooked lentils

1/2 cup cooked quinoa
1 cup shredded napa cabbage
1/2 cup diced carrot
1/2 cup diced cucumber
1 apple, peeled and cut into matchsticks
1/4 cup finely chopped green onion
1/4 cup finely chopped cilantro
1/4 cup toasted pumpkin seeds

Dressing Ingredients:

1/4 cup olive oil
zest of 1 lemon
2 Tbsp. lemon juice
1 Tbsp. apple cider vinegar
1 1/2 tsp. tamari
1 tsp. agave or maple syrup
1/2 tsp. dijon mustard
1/4 tsp salt
1/4 tsp ground pepper


Directions:

1. Combine all salad ingredients in a large bowl.

2. In a separate bowl, whisk together all dressing ingredients (or shake together, in a jar).

3. Pour dressing over salad and toss together.

4. Serve immediately, or refrigerate for 1-2 hours before serving.


Use extra cabbage, green onions, and carrot shreds for stir-fried rice. Yum.
