Air Fryer Onion Rings


1 large sweet onion

3 T Chickpea Flour

1/4 cup Almond milk or other non-dairy milk beverage

1 t olive or coconut oil

1 t Slap Ya Mama cajun seasoning

1/2 cup gluten free panko, bread crumbs or crushed puff rice cereal

Whisk together everything except 1/2 cup of panko etc. 

Place the 1/2 cup gluten free panko, bread crumbs, or crushed puffed rice into a separate bowl. 

Slice onion into rings and separate the layers.

Dip the rings into the wet batter then into the dry crumbs. 

Place onto air fryer racks or into basket in a single layer.

Fry at 400 degrees for 20-25 minutes. 

Note: can be done on parchment-lined sheets in a convection oven or regular oven. If not using convection, turn the rings halfway through the cooking time.
